Responsible for rebranding and redesigning the business while mentoring Head Chef Ryosuke Deguchi. This 28-seat modern Japanese kaiseki restaurant, developed a new menu concept and helped design and re brand with a modern twist. I was also responsible for monthly spirit pairing inspired events focused on high quality Japanese spirits and sake, and amazing seasonal produce.
